Our Story —

Chef Aaron (AJ) Pietzyk fell in love with food at a young age, studied Food Science at Clemson University, and then moved to Charleston to chase his dream of becoming a chef. Aaron trained at the Art Institute of Charleston in South Carolina, and spent five years at the iconic Poogans Porch Restaurant working his way up from line cook to Chef de Cuisine and expanding his lowcountry repertoire. Living and working in this culinary mecca, AJ never anticipated leaving Charleston, but fate had different plans. On a vacation in Key West, he met and later married his soul-food mate, Erica. Erica and AJ saw the opportunity to bring their lowcountry love to Richmond’s noteworthy food scene in an elevated food truck and mobile catering concept: Lowco Eatery, Inspired Southern Cuisine.
